Default what you think of these domains
I have a couple of domains I wanted your opinion of
what you think of them as names and what you think I should do with them

paintingsfromireland.com
christianireland.com

Personally I think they are good domain names in their own right I just dont know what to do with them

Yep - good domain names.

Is there a good christian portal in Ireland? Maybe you could build it if there isn't.

As for the other one - A site dedicated to Irish Art? or some kind of affiliate store. Do art.com do affiliate stores?
