If you mean .IE compared with .COMs all things being even beside this. The domain location of a .COM can be targeted to Ireland in the Webmaster Console on Google.

we are targeting pretty much everywhere. not just Ireland.

I was just wondering, because we are an Irish company, if it would be better to have a .com or a .ie.

I'd get both the IE and the .com

For print marketing etc., you can use .com for international and the IE for Ireland
